With Hommage, 3 Fonteinen has created an absolute classic. When the founder of 3 Fonteinen Gaston Debelder died in 2005, this Lambic was brewed by his son Armand as a memorial beer for his father. Hommage is stored on 30% raspberries and 5% sour cherries. A thoroughly perfect beer, which rightly belongs amongst the best rated Lambics ever.

Havgus 12 is produced at Tistrup Dairy. Here we have a very special lactic acid culture that has been kept alive by daily inoculation since 1943. We supplement the lactic acid culture with Lactobacillus Helveticus. Precisely this combination gives Havgus 12 its ideal start to 12 months of maturation. 

We care for and ripen the cheese in its own room at Affinage Center Unika, which is an extension of the dairy. Here the cheese is slowly dehydrated. During ripening, the crunchy protein crystals are formed and Havgus 12 gets its firm structure, special taste and fullness.

Kovending from Gjesing Dairy is a special sight of a blue cheese, where the tradition has been turned upside down. Usually when making blue mold cheese, the mold is allowed to grow inside the cheese while its exterior is washed in salt water to inhibit the growth of mold on the outside of the cheese. 

With Kovending, it's just the opposite. The cheese is coated with blue mold, which is allowed to grow on the outside of the cheese. This is how the cheese gets its beautiful, bluish-black shades, while its interior remains white. The mold culture contributes flavor and texture to the exterior of the cheese and gives it a balanced bitterness. The bitterness acts as a counterpoint to the creamy and continuous core of the cheese.

Kovending

Skilled Danish chefs had long demanded a Danish colostrum cheese, and therefore we created Kry. A cheese on unpasteurized milk from one herd at Sundgaard near Holstebro selected because of its milk quality. Because the milk is not pasteurized, we can preserve the natural enzymes and the naturally occurring bacteria. These promote cheese ripening and provide a special taste complexity. 

The production of solid colostrum cheese is a demanding craft that requires great patience and knowledge. It took four years to develop a colostrum program to produce Danish colostrum cheese.

The Saison Dupont is a top fermentation beer with refermentation in the bottle. Since 1844, this beer has been brewed in our farm-brewery, during the winter time. Then this beer became a second refermentation in the barrel.

We produce The White Lady at Troldhede Dairy, where there is a proud tradition of blue cheese. In The White Lady, we have tripled the milk's natural fat content of cream. It raises the cheese to 75+, which is a dairy technical term for the fat content of the dry matter. In the finished cheese, this means a fat content of almost 50%. The buttery cheese is balanced with the yeast culture Geotrichum, which forms a crisp, thin, white mold surface.

The White Lady

Trefold is a dehydrated white mold cheese from Troldhede Dairy. The cheese is a further development of The White Lady. A white mold cheese that we add to the yeast culture Geotrichum, which forms a very thin mold surface. Once the White Lady is created, the cheese becomes dehydrated, so that the ripening goes to sleep and the fine balance between acid and obesity is concentrated. In this way we intensify the taste and Trefold arises.
